Pork fillet with Mirabelles
For 6 people
Preparation time: 20 minutes
Cooking time: 40 minutes
Ingredients:
- 1 fillet of pork
- 750 g. mirabelles from Metz
- 50 g. butter
- 2 dessert spoons cognac
- ½ glass of water
- 1 dessert spoon caster sugar
- Salt and pepper
To prepare:
- Season the pork with salt and pepper
- Heat a little of the butter in a pot and brown the meat
- Discard the cooking fat
- Add the remainder of the butter and cook on a low heat without a lid for 25 minutes
- Remove the meat and keep warm
- Wash and destone the mirabelles
- Deglaze the pot with the cognac and a little water then add the sugar
- Bring to the boil, add the mirabelles and cook for 5 minutes
- Cut the meat into thick slices. Place in a serving dish surrounded by the mirabelles and pour over the sauce
