Pork fillet with Mirabelles

For 6 people

Preparation time: 20 minutes
Cooking time: 40 minutes

Ingredients:

  • 1 fillet of pork
  • 750 g. mirabelles from Metz
  • 50 g. butter
  • 2 dessert spoons cognac
  • ½ glass of water
  • 1 dessert spoon caster sugar
  • Salt and pepper

To prepare:

  • Season the pork with salt and pepper
  • Heat a little of the butter in a pot and brown the meat
  • Discard the cooking fat
  • Add the remainder of the butter and cook on a low heat without a lid for 25 minutes
  • Remove the meat and keep warm
  • Wash and destone the mirabelles
  • Deglaze the pot with the cognac and a little water then add the sugar
  • Bring to the boil, add the mirabelles and cook for 5 minutes
  • Cut the meat into thick slices. Place in a serving dish surrounded by the mirabelles and pour over the sauce
