Mirabelle ice cream mousse

Ingredients:

  • 1 kg. mirabelles
  • 400 g. cream
  • 500 g. caster sugar
  • 8 egg whites
  • 1 dl. Mirabelle liqueur

To prepare:

  • Remove the stones from the fruit and blend in a liquidiser to obtain a purée
  • Whip the cream until thick
  • Whisk the egg whites with the sugar
  • Mix the whipped cream into the fruit purée
  • Add the liqueur to the egg whites, a little at the time
  • Pour the mixture into individual bowls or a mould and leave to set in the fridge for a few hours
