Mirabelles in syrup

Preparation time: according to the quantity
Cooking time: 20 minutes

To prepare:

  • Mirabelles in syrupMake the syrup using 1 litre of water + 500 g. sugar (preferably granulated)
  • Remove the stones from the mirabelles
  • Bring the syrup to a strong boil
  • Drop in all the Mirabelles at once
  • Reduce the heat as soon as it starts to boil and keep at simmering point
  • Test with a sharp knife: the fruit should still be slightly firm when cooked
  • Leave to cool in the syrup
  • Preserve in the syrup or use for tarts or fruit in syrup
