Mirabelle jam

Ingredients:

  • 1 kg. destoned mirabelles
  • 800 g. sugar

To prepare:

  • Select very ripe fruits, remove the stalks and wash
  • Remove the stones and put the fruit into a large bowl
  • Add the sugar and leave to macerate for three hours, or in a cool place overnight
  • Place in a pan
  • Place over the heat, stirring occasionally
  • Leave to boil for 15 minutes making sure it doesn’t stick, then skim off the scum
  • Take the pan off the heat and leave to cool for about 10 minutes
  • Pour into sterilized jam jars
